Seven Course Food & Wine Pairing

The seven course dinner and wine pairing with Hiddencroft Vineyards on Veteran’s Day was a great success. Here is the menu from the event:

Cedar Grilled Salmon with a Caper and Tarragon Cream Sauce over Ox-Tail Risotto

Course 3
Dutchman’s Creek
Rosemary rubbed Lamb Chop over humus infused with pine nuts, topped with sweet peppers roasted in Spanish Olive Oil and sea salt. Served with home made rustic bread

Course 4
Cabernet Franc
Apple Wood Smoked Filet Mignon with Wasabi Cognac Sauce and Ginger pickled in Sweet Cherry Wine, toped with Asparagus cooked in home made organic chicken stock, Tarragon and saffron

Lobster Turnovers with Chambourcin Pink Sauce

Pumpkin Cheesecake with a white chocolate Blueberry Topping
